Key Lime Yoghurt Cheesecake

1 (250g) package of cream cheese, softened

150g FAGE TotalĀ 

100g condensed milk

1 lime, zested

3 tablespoons lime juice

100g digestive biscuits crumbled

4 tablespoons unsalted butter, melted

  1. In a medium size bowl, combine cream cheese, FAGE Total yoghurt, condensed milk, and beat with a handheld electric mixer until smooth. Add lime zest and juice and beat until well incorporated. Place the mixture into the fridge to firm up for up to 1 hour.
  2. In another bowl, combine digestives and butter and set aside.
  3. After the yoghurt has firmed up, alternate yogurt mixture and biscuits into a parfait glass and serve.
