100 g FAGE Total Yoghurt
2 eggs
2 tsp black butter (available in specialty stores)
Pinch of salt
Pinch of ground white pepper
Fresh chives for garnish
2 slices of bacon

Steps
- Pre-heat a small non-stick frying pan over low heat.
- In a small bowl, whisk together the eggs, yoghurt, salt and pepper.
- Cook the bacon for few minutes, then remove the bacon and cut into fine slices. Set aside.
- Add the eggs to the pan.
- Stir frequently with a heat-proof rubber spatula until thick and creamy curds form and no liquid egg is left. Do not overcook or the eggs will be tough.
- Serve immediately and garnish with the bacon and fresh snipped chives.
