Greek Yoghurt Pumpkin Parfait

Ingredients

250 g pumpkin puree

500g yogurt FAGE Total 5%, FAGE Total 0%

4g vanilla extract

50g icing sugar

2g pumpkin pie spice mix

1 zest of a lemon

5g lemon juice

100g ginger biscuits, crushed

Pecan or hazelnuts for garnish (optional)

    Steps
  1. In a medium bowl, combine pumpkin puree, 250g Greek yogurt, vanilla extract, 25g icing sugar and pumpkin spice.
